For the most part, a balanced vegan diet DOES provide us with all the nutrients we need to be healthy and thrive. However, due to depleted soil quality and other factors like food transit time, our food is not as nutritious as it once was and supplementation is necessary. This does not just apply to vegans and vegetarians, but omnivores as well, who are just as susceptible to b12 deficiency bc it’s all about absorption.  B12 is a key nutrient that our bodies need to function properly. Long-term deficiency can result in permanent neurological damage. In 2008-ish I got my b12 tested and it was in the high 500s which was far beyond the minimum. Fast-forward to 2013 when I got tested again and my B12 had dropped to below 200 after no supplementation and 4 years on a very strict low fat raw vegan diet. B12 deficiency is often accompanied by anemia which I had for a very long time. My recent blood work after 3 months of daily supplementation and a b12 shot has showed steady improvements in my levels and for the first time in my life, my blood work shows no signs of anemia or iron absorption problems (and obviously I haven’t been vegan my entire life, so that should say something about the power of a balanced vegan diet that encompasses a wide variety of fruits, veg, beans, greens, some nuts and seeds/plant-based fats, grains, and starches.) Most importantly, when it comes to your own health it’s important to look at supplementation objectively vs. listening to other people who claim it’s not necessary and that we get enough b12 simply by not washing our organic fruits and veg. Get your blood work done so you can see for yourself what’s going on with your body. If your levels come back within normal range, that’s great, and you probably don’t need to supplement, but stay on top of it. Epically massive salads for my client; 1/2 lb of spinach, roasted corn/pea mix, spiralized zucc, the most bombing cherry tomatoes, shredded and sliced carrots, sliced celery, sugary snap peas, and spiralized beets hidden underneath the pea and corn container. topped with fresh-squeeze OJ! Granola dry spell as finally come to an end, cuz I friggin’ LOVE granola, but store-bought brands are loaded with oil, salt, and super high in fat. No thank you! I have been making my own instead and it’s SO much better compared to anything from the store and way cheaper too! I’m still working out the exact recipe, but as soon as I do I will post it, bc this is just too damn good to keep to myself!Best part, other than it’s yum-factor, is that it’s all #rawvegan, #glutenfree, #saltfree, nutfree, #oilfree, and #organic!
